Perilla Oil

An oil extracted by roasting and pressing the seeds (perilla seeds) of the perilla leaf, a traditional Korean herb. Along with sesame oil, it is one of the two major traditional aromatic oils that represent Korea.

Flavor

While sesame oil has a sweet and intuitive nuttiness, perilla oil has a heavy, fresh herbal scent along with a deep, complex flavor (Earthy & Herbal Nutty). It is extremely rich in Omega-3.

Substitutes

It can be substituted with Sesame Oil, but the flavor profile is different. Among Western ingredients, Flaxseed Oil is the most similar in terms of nutritional value and heavy texture.

Storage

Unlike sesame oil, it goes rancid very quickly when exposed to air. It must be kept in a brown bottle and stored in the refrigerator (0~4°C), and it is recommended to consume it within 1-2 months after opening.

  • Q. Can it be used for heated dishes?

    A. Perilla oil also has a very low smoke point, so heating it over high heat can create carcinogens or cause it to burn. It is safer to use it for tossing namul or adding flavor just before turning off the heat.
